Menu Plan--It Took Me A Week To Do This

I took a pile of cooking magazines to the beach with me with the grandiose idea of making enough menu plans and grocery lists to last at least a month. Except that the beach house has cable and instead I watched the Food Network and reruns of Law and Order, and only created one menu plan.

Here is what we're eating this week.

**Asian Pot Stickers with Ginger-Garlic Sauce--Back in July, I asked for recipes for Asian Pot Stickers and Stephanie directed me to this one. I'm thinking salads and fruit on the side.
**Sesame Mango Chicken with Brown Rice--A new recipe from Clean Eating. Not only does it look easy and yummy, but I have all the ingredients on hand, except for the mango. I'll serve salad and melon on the side.
**Black Bean Tostadas--Another Clean Eating recipe, this one is meatless and features a light yogurt sauce. I'll serve Spanish Rice on the side.
**Roasted Cauliflower, Leek and Garlic Soup--Soups are almost always easy to make, and this version gets its flavor from roasted garlic. Since it's pureed, I'm hoping the kids will at least try it, because it's loaded with veggies. Fresh bread and salads on the side.
**Steaks With Veggie Salsa--I've made this recipe several times since I first came across it. It's easy and yummy. If John can get home from work early enough, I'll pass along the grilling duties to him. Otherwise I'll cook the meat in the broiler. I'll serve corn on the cob on the side, and tortilla chips to go with the salsa.

Summer is winding down, and with it, the last of the local tomatoes, corn and fruit! Up next, apples and pumpkins!

What are you eating this week?

I'm not so much for the pork, is there another sub I could make for that part??? Plus I kind of need to see step by step pics of what he's talking about....having never made any Asian food I'm not 100% sure I could do this. I know Ken would love it though, so if you've got some easy tips...please help me be a better wife!! : )

This menu sounds yummy, I'm really wanting to try making California Rolls, I thinks the assembly will be the hard part...I'll keep thinking it about it!!!

I guess you could sub regular ground beef. I'll ask my H. This is a new recipe for me, and when I looked at the ground pork at the store today, it looked really gross. Plus it was super cheap, so that makes me think it's fatty! I'll ask my H for guidance before purchasing the meat for this recipe.

I don't have a menu plan for the entire week, but tonight we had goulash-leftover gravy+tomato sauce+ sour cream+ worchestershire sauce served over noodles with leftover roast beef.
