We're heading to the beach for our annual end of summer vacation, and that means a lot of packing, list making and preparations for me. We rent a house in Ocean City, which is a lot more fun than staying in a hotel. Having separate bedrooms means the kids sleep better, and no one has to tiptoe around and whisper once they are in bed because they're a whole floor away. In addition, the house has a full kitchen, so we can not only save money by not eating out all the time, but we can eat healthier too.
Of course, it wouldn't be the beach without hitting the boardwalk for fries one night, and we always visit a nice little restaurant in Bethany Beach as well, but that still leaves us with 5 meals to cook. Here's what we'll be having.
**Spaghetti and Meatballs--John's mom makes the meatballs at home ahead of time. This is always a crowd pleaser and there are always leftovers for lunch the next day.
**Salsa Ranch Chicken Wraps--One of my most requested recipes. Also incredibly easy and tasty, especially with homegrown cucumbers, peppers and tomatoes.
**Spinach, Apple and Cheese Panini Sandwiches and Tomato Basil Soup--I made these sandwiches for the first time a few weeks ago and they were a huge hit. A recipe from Clean Eating. The soup is simple and flavorful and a nice side dish to go with sandwiches.
**Chicken Cannelloni--I made a double batch of this delicious pasta dish for dinner one night before we left, and saved the other half for vacation. It reheats well and the cottage cheese/spices mixture only tastes better the second day.
**Leftovers--We'll probably have enough leftovers for a clean-out-the-fridge meal. if not, Mexican Pizza is an easy and fast alternative.

I am always impressed with your menu plans, and even more so that you are planning these for vacation. I am going to have to try your tomato soup with all the tomatos my garden produced. Hope your trip doesn't get washed out with all the storms I am seeing on the east coast.
