It's been a little while since I last posted a menu plan, but last week was sort of weird. Between the holiday and my injured husband and physical inventory, my routine was all off. So if I wasn't on my own for the evening and feeding the kids whatever was easiest and eating cereal for my own dinner after they went to bed, I was rummaging around in the freezer to see what I could find.
One night, we had Ham Steaks with Mustard Cream Sauce, except I left out the onions and used cream cheese instead because we were out of sour cream.
Another night, we had pork tenderloin with mashed garlic potatoes, salads and corn on the cob.
On Sunday afternoon, my husband was anxious to get out of the house and do something, so we took the kids to a playground near the airport. It's right across the street from the runway, so every couple of minutes, an airplane flies across the road really low. The kids thought it was cool, but just watching the planes made me feel anxious. I hate to fly. Then we went out to eat, which turned into an exercise in shoveling the food down our throats as fast as possible so we could leave. Johnny was fine, but Maureen was not interested in being quiet this time.
After that, we stopped for what was my first ever trip to a Wal-mart Supercenter. Hopefully, it will also be my last. Perhaps some people find the prospect of buying produce and diapers and top soil and automotive oil all in the same trip to be enticing. But the whole experience left me feeling like I needed a couple of shots of vodka. I still loathe Wal-mart, even brand new ones with wide aisles and thirty checkout lanes. The produce was a lot cheaper than Safeway, but I don't think I can bring myself to go back in that place anytime soon.
Anyway, here's the plan for this week:
**Easy Cheesy Ranch Chicken: I got this recipe from a bottle of Hidden Valley Ranch dressing and it has remained a family favorite. The dressing keeps the chicken nice and moist. Extra points because it takes literally minutes to throw together. Salads and steamed green beans on the side.
**Panko-Crusted Chicken With Mashed Potatoes: Breading chicken with panko and then pan frying it keeps it nice and crispy. The potatoes are the kind in the pouch, which I rarely buy. but I have some to use up. Sure, they're kind of cheating, but they taste pretty good and they're ready in four minutes.
**Herbaceous Beef Burgers: A new recipe from Rachael Ray, these burgers have a cheesy surprise in the middle. I might pan fry these or I might get the hubby to fire up the grill. Sliced melon and corn on the cob on the side.
**Pork Loin With Mashed Potatoes and Gravy: Yes, again, but the Smithfield Pork tenderloins were on sale last week, so I bought several. I will do the meat in the crockpot and make the potatoes from scratch this time. With homemade gravy too! Take that!
**Tomato, Basil and Fresh Mozzarella Grilled Sandwiches: These quick and yummy sandwiches taste like bruschetta! The original recipe doesn't call for fresh mozzarella, but I think it makes the difference. Fruit salsa and cinnamon chips to round out the meal.
Okay, so only two of these meals are sandwiches, but the first two are prepped and cooked in no time flat and the pork sits in the crockpot all day while I ignore it.
