When the Fourth of July rolls around, it means summer is in full gear. What better way to celebrate than with family, friends, food and fireworks! Thanks to the construction around here, we haven't been able to watch the fireworks from our deck for quite some time. But we can still cook on our grill out there! So here is the menu for the holiday at our house.
Appetizers
Fruit Salsa With Cinnamon Chips--This yummy and healthy starter can be made in advance and is a tasty combination of sweet and tart. An added plus is there is no cooking involved. Just chop and toss!
Veggie Pizza Squares--This is a Light and Tasty makeover recipe. Much lower in fat and calories without sacrificing flavor. This dish can also be made ahead of time.
Main Course
Firecracker Burgers--an American favorite with a spicy twist! Do em' on the grill and keep the house cool. Premake the patties the day before and spend more time with your family on the day of.
Stuffed Grilled Zucchini--take advantage of summer surplus from the veggie garden! These cheesy zucchini boats cook up in no time on the grill.
Italian Grilled Veggies--you'll meet your daily requirement of veggies with no problem after tasting this zesty grilled dish. Cooking in a foil packet eliminates dishes!
Sesame-Almond Romaine Salad--no summer meal is complete without salad. This crisp and crunchy version is easily prepared.
Dessert
Dark Chocolate Fondue--after the fireworks are over, escape from the mosquito's and come inside for a chocolatey end to the evening.
